Fresh Nevada Soft Shell Pine Nut Roasting Instructions

Getting the salt on the pinenut just the way you like it.

Before you start roasting many people ask, "How do I get that salt to stay the way it taste best?" The secret, Water. Yep, simply prepare the pinenuts you like inside of a bowl or pan by adding a small amount of water, about 1 lid full for every pound. Use 2 lid fulls if you like the salt a little toasted to the pinenut. Mix the water and salt throughly and bake or cook in pan.

NO SALT Tip

Just quickly rinse pinenuts with water (rinsing is not necessarily to clean the pine nuts, it is to moisten them, instead of using oil which give's a not, so fresh taste) and spread in pan or cooking sheet.

Salting for Microwave use:

Put minimal amount of water, just enough to get the salt to stay. Litterally just sprinkly a dash of water with your hand.

Oven ( preparation time 8 - 12 minutes)

- Preheat at 350 degrees.

- Place pre-papared pine nuts (salted or non salted) in cookie sheet with an even layer of pine nuts. (Some prefer to put foil around the cookie sheet, this allows the pine nuts to roast more evenly.)

- Allow pine nuts to heat for about 3-5 minutes (this allows the water on the pine nuts to evaporate, while at the same time boiling the inside of the pine nut). During this time if you check the pine nuts you may notice that the top part of the shell are drying up, this is good, if so, mix them around, if not than this is ok, wait a minute longer and than mix them around.

- At about 5 minutes or so the pine nuts may begin popping, mix them, and do so more frequently the more they pop, this means they are near ready.

- The test around this time is to sample the pine nuts, you are looking for a clear light brownish boil and a delicious suitable taste to your liking. Some may like them more raw and or more toasted than others. SIMPLY SAMPLE THEM UNTIL YOU GET THEM THE WAY YOU LIKE.

Stove

-Place pre-papared pine nuts (salted or non salted) in pan of your choice with an even layer of pine nuts (best results are known to be with a cast iron skillet).

- Turn stove on high (keep on high unless pan is smoking too much).

- Wait about 2 minutes and mix pine nuts so that bottom of pine nut(s) doesn't burn.

- Between 3-5 minutes pine nuts will begin to pop; Mix more frequently and Sample until you get them the way you like. Look for a clear light brownish boil on the actual pine nut.

Microwave

-Place 1/2 cup pine nuts (salted or non with instuctions above. With Non-Salted, DO NOT wet) in paper bag or microwavable bowl for 1 minute. Depending on your microwave, it may take a bit less or longer. Listen for popping. Once you hear about 5 or more pops STOP microwave. Cook longer if needed.
