Storing and Preserving Your Nevada Soft Shell Pine Nuts!

How to keep your Fresh Pine Nuts Fresh and Stay so the Longest Possible.

In order to do so you must keep you pine nuts in a cool and dry area, and if possible, dark (which prevents mold from going due to too much exposure to sunlight.

Freezing (Freshness Life Span - As long as they are frozen)

- Some prefer to simply freeze their pine nuts in a plain zip-lock bag or freezer bag with pine nuts alone and defrost them as they wish. We on the other hand have used a proven and known technique that allows for pine nuts to preserve better without much harm done to them, such as frostbite and bitterness.

This is achieved by sealing the pine nuts you wish to free in a freezer zip-lock bag (if freezing a whole bunch you might want to make small bags so that when you defrost them you only defrost what you want* ) with water. The water line should go about half an inch above pine nut line. With this said Seal up the bag and freeze them away. This technique will allow the Freshest pine nuts possible.

* Please be aware that pine nuts MUST be eaten or roasted within a reasonable number of hours to insure that they are freshest. Because they have been defrosted with water exposure they SHOULD be eaten or roasted immediately upon defrost.

Maintaining Freshness (this does not apply to frozen pine nuts)

- If you have a large amount of pine nuts *lets say ten pound or more, it is most likely nescessary that you mix the pine nuts that are stored in a Gunny-Sack or bowel with that quantity or more. Simple either shack the Gunny-Sack or brush your clean finger through the bowl of pine nuts to allow the air to circulate more efficiently between the pine nuts. Doing so will allow clean airflow to keep your pine nuts freshest possible. This should be done about every 4-5 days if the location is higher than a cooled room. For larger quanities this should be done probably twice a week. However if the room is almost consistently 60 degrees or less (like in a garage in the winter) it may not be nescessary.
